This herb grows like crazy for me. I have been trying to incorporate it more in my cooking. So how do you use it?

Use it in tomato sauce for spaghetti or pizza. Try it with eggs and see if you like it that way. Italians warm up our leftovers, crack a few eggs into the pan on top of everything and call it lunch. Fresh herbs are great with that too.

I will definately try it with eggs! When you are topping that everything with eggs, are those eggs scrambled or whole?

Fresh herbs can be used in any way the dried herbs can be, however, you will want to experiment with amounts, since the flavor of fresh herbs is stronger than that of dried herbs. Always remember, it's easier to add more than to take out what was already added (that will help you avoid having to triple a recipe because you misread the amount of a seasoning and put in a TBSP instead of a tsp).

I was looking for good flavor profiles for oregano specifically. I really only use it in Italian dishes and on chicken. Isn't oregano found in Greek foods?

looks like I got it backwards...you use MORE fresh than dried. check out this site: foodNetwork has some things about oregano and recipes. and this oneRoastPotatos with Garlic and Oregano

I was going to suggest the herbed potatoes, too. Or macaroni with fresh herbs and either butter or olive oil. Add some garlic, too. If you're really adventurous you could do an herb focaccia by adding herbs to a basic dough like this. Make a tomato salad using fresh tomatoes, garlic, herbs (oregano, basil, and rosemary work very well) all mixed together and drizzled with extra virgin olive oil (first person to post "EVOO" gets banned for life! ).

You can either scramble the eggs first or crack them whole into the pan. When you stir up the potatoes and everything the eggs will scramble up naturally. And yes, oregano is used in Greek food also.
