I made something which I ended up not liking. Chicken thighs dipped in flour then egg than bread crumbs mixed with parmasian. There was a sauce of crushed tomatoes, shallots, garlic, and a few herbs. After it was done motzzarella cheese was melted on top. I don't think I like chicken thighs at all.

Our traditional after-church meal: soup.

It was chicken rice soup with veggies. But I added too much rice, so it ended up being more like a chicken rice stew.

Our church is having a show tonight. Money will go to the Kids Mission Trip this summer. So I get to eat teryaki chicken, salad, rice, ice cream. Yum. And I don't have to clean the mess.

I worked today, and they provide my meals when I work. I something that was kind of like a chicken tetrazini type dish, and veggies, and sugar cookies. And coffee, lots of coffee, because I had to work late.

Catherine your chicken dish sounded good, I don't really like the thighs of chicken either though, they are too fatty and a little tough tasting or something I usually do what you did with chicken breasts, maybe drumsticks would have been nice too?

We had left over spaghetti bolognaise, my favourite!!

Either burgers on the grill or tenderloins. I have the buns, what I cook to go in them will depend on th weather.

Lasagna sounds soooo yummy...

We are having lemon basil chicken. Its a new recipie and I read the reviews and it sounds promising! I wish I had some red potatoes..

Care to share you pizza pasta recipe, Erin?

I think tonight will be sausage and hot dogs (for the kids) on the grill. We still have baked beans and fruit salad leftover from the BBQ at my mom's yesterday, so those too.

yum...sounds good Donna...I can't wait til we get moved and can grill again!!!!! (My mom is not much of a grill person...she doesn't even have a grill)

All this chat about food is making me hungry!
Monday's have to be quick and easy meals. So tonight I think it'll be BBQ pork (from a pkg) on buns with chips. Maybe some cottage cheese on the side for my hubby.

I love grilling. We use the grill probably 3 or 4 times a week during the 6 months that aren't winter. LOL The best part about grilling...I don't do it. Brian does.

Okay...Pizza Pasta. Cook a package of cheese tortellini. While it was cooking in a big skillet I sauteed...2 cloves garlic, onion, and bell pepper in olive oil. Then I added 1/2 package pepperoni, 1 can sliced olives, 1 can sliced mushrooms, and a can of spaghetti sauce. When the pasta was cooked I added it in, stired it all up. Topped with Parmesean cheese! Yummy and super easy! You can mix and match any of the stuff you wanted to add. I just started adding stuff and realized it was the ingredients in a pizza!

lol...we love it too. We had to leave ours in Germany (weird rules with customs and such...it was easier to just throw it away because they wanted every little speck of it cleaned)...so guess what Paul gets for Father's Day!!!!!! He may get that early...maybe instead we should get ourselves two house warming gifts...a bed (for us...we don't have one) and a grill!!!!!

Erin, that does sound yummy! I like to cook torellini, mix with spaghetti sauce, put in a baking dish, cover with mozzerella cheese and bake it. I think it would be soooooooo much yummier with the additional "toppings!"
