I'm afraid I don't have much but I'll be looking in for ideas. My dh (and therefore my kids) are very picky and are junk food lovers. We are trying to do better - to dh's credit, he's trying. At the moment, he's training on a bodybuilder program so he is eating healthy - although he'l still only eat (canned) green beans so we have a way to go. The best we can do, I think, is to continue to work on ourselves and hope they learn from example in the long run and outgrow their fascination with food in cool packaging or that comes with a toy! That's what dh and I are trying to outgrow as children of the '70s. I've bought a bunch of cookbooks with ideas for kids that never really got much usable stuff for me. I got "the Sneaky Chef" but my dad's girlfriend didn't warn me before I opened that Christmas present from her in front of everyone so I was met with much suspicion with anything I tried to cook out of there! I think it's got some good ideas, though. My kids will eat whole wheat pasta - even plain without sauce! They eat a lot of fruit - especially my son. My daughter has to be forced to eat meat, I see no reason to push red meat on her, but she wont eat beans or other proteins except Cottage Cheese so at least I've got that. And she'll eat fish. My whole family is bad about veggies though. And I've never been able to break my dh of kids' cereal! But if your family is less suspicious and a little more open than mine, try these pancakes... 2 egg whites, 2 T cottage cheese, 4 T oats (not instant), cinnamon and vanilla. I have a "Magic Bullet" and it mixes this perfectly for pancake batter. Before my waffle iron busted, I made it for that which was great! But I think I used a little more oats for that, I'm not sure. I'm trying to take baby steps and, in the long run, hope example trumps advertising!
