I've got some canning to do and got to wondering - does anyone here can stuff?

I used to can a lot when I lived in an orchard area. You can get the Ball canning book in PDF form online for safe canning instructions.

A little. I've canned applesauce and green tomato pickles.

I don't have a decent garden, so I don't have much to can.

I would can a whole lot more if I had a canner, all I can do now is hot water bath. I am going to grow a big garden, can my own spaghetti sauce and salsa. I wish I could keep lettuce good otherwise I would can that too! I also plan to go strawberry picking this year and make my own jam.

I got a pressure canner some time ago so I could can veggies/soups and stuff. I haven't gotten to use it yet. :( I should get some recipes together that I want to try out and get-er-done.

But first...I need to make more blackberry jelly, raspberry syrup, and sweet cherry chutney. Got all the fruit in the freezer and I need to use it soon. I've got a recipe for cardamom applesauce that I'm dying to try out too.

Yup! we still can. My wife cans the peaches from our Peach tree. She uses the hot water canning methold and they turn out pretty good. She also makes Red current Jelly from our Current Bushes. Boy is that good.

If purple grapes are available this year she will make grape jelly also.


Canning seems to be coming a lost art. However the way food costs are going up someone should teach this stuff to the girls in Home Economics in Highschool.

If our gardens do good this year we may try canning Tomatoes and a few other things.

I canned over 500 quarts last year---I do Applesauce all flavors, spagetti sauce, stewed tomatoes, salsa, pizza sauce, beans, tomato soup, chicken soup, all kinds of jam and jelly, fruit, Apple and peach pie filling---what ever I was given I stuffed in a jar---hopefully this year I will be in my own kitchen to do it all!![:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)][:)] I also go to peoples homes and teach canning

I canned some blueberry jelly and strawberry jam recently (the blueberries were leftover frozen ones from last summer).

Hubby planted ELEVEN tomato plants. I know we'll be making salsa. Hopefully I'll make some tomato sauce and possibly some green tomato pickles if Tricia will give me her recipe. [;)]

Here it is, along with the notes I made on it when I made it. I don't guarantee satisfaction - I've only made them once. Your mileage may vary. [;)]

Green Tomato Pickles
9 c vinegar
3 c sugar
5 lb tomatoes cut in 1/2 inch wide slices
10 med size onions cut 1/2 inch wide slices
10 tsp celery seeds
5 tsp mustard seeds
5 tsp dill seeds
10 peppercorns
5 cloves garlic

In an enamel or stainless steel pot, bring vinegar and sugar to a boil. Meanwhile layer tomatoes and onions in 5 hot, scalded quart jars. To each jar add 2 tsp celery seeds, 1 tsp mustard seeds, 1 tsp dill seeds, 2 peppercorns, and 1 clove garlic.

Pour boiling vinegar mixture into jars, allowing 1/4 inch headspace. Seal, then turn jars once to disperse spices. Process in a boiling-water bath for 15 minutes. Makes 5 quarts.

10/07 Made 7 qts. 10 onions was way too many for 7 quarts. Used about 7, if that. Made an additional 1 c sugar / 3 c vinegar for 7 qts with some left over. Next time: use 3.5 c sugar, 10.5 c vinegar and see how that works.

Think she'd mind sharing the recipe? That sounds delicious.

I was talking to a friend of mine last night and told her about the canning I needed to get done. She wanted to learn how so she'll be coming over next week. I'm looking forward to it. Yeah, it does seem to be a dying art.

I had a busy, and productive, day today and canned some good stuff. I am exhausted. I made cardamom applesauce, pizza sauce, strawberry syrup, and 2 batches of peach jam. I'm making the juice for the peach jelly now - I'll finish that up tomorrow. I've got a lot more to do though. Seems like I should've had more done than that but, I kid you not, I have not sat down all day until now. And boy does it feel good to get off my feet!

Has anyone else drug out their canners this season? I'm hoping to drag out the pressure canner within the next couple of weeks.

We've just barely gotten things growing here - it's nowhere near canning time yet. [;)]

I just planted some garden stuff - carrots, cucumbers, and tomatoes.

I think it's really funny that my garden is just taking off while others are canning already[:D]

My canner is in its home (but I did pull it out to do the strawberry jam and blueberry jelly). I probably won't can anything else until late summer.

It's still too chilly here at night to plant tomatoes, cucumbers, squash, and melon. We won't see strawberries or blueberries until late next month.

No, I don't have any canning stuff out. [8D]

Dh took out 6 jars to mess around with sprouts a few weeks ago though. I still need to clean those back up.

Auben, strawberries come out here in April. Wow, your season is really late! Is it short as well? We typically have summer weather well into October here. My roses bloom from March through November!

Up here, strawberries are mid/late June to early July. Gardens are generally planted around this time - the last couple weekends of May.

There can be snow in mid-October. It may not stick, but the air is cold enough for snow to fall.

Of course, I'm not in Auben's state. [;)]

Oooo, this sounds intriguing. I make a lot of applesauce from my two trees and like to vary it a bit. Would you care to share this recipe.... sometime between now and FALL. lol


Oh, and since you have a pressure canner, I have been using a great shortcut for years. Instead of boiling water bathing my canned tomatoes and heating all the water and spending so much time cooking them, I learned to put them in the pressure canner, bring them up to 15 lbs pressure, turn it off and.... even be able to leave the house! I first learned it from our county extension maybe 20 years ago but nowadays they're so afraid of saying anything wrong they haven't "recommended" that procedure. But I've never had a failure with it. [:D]

I live in Wisconsin, US zone 4, and I don't think my season is late...yours is early!

We can. I can things that can be done in a hot water bath. I'm confused a bit. I want to can a lot more things and know I need a pressure canner. I want to know is a pressure cooker and a pressure canner the same thing? I saw a cooker advertised that has a canning setting. What do I need?

Right now I can bread and butter pickles, dill pickles, corn relish, ripe cucumber relish(made from those cukes that get to monsterous size and start to turn yellow! It's the greatest hot dog relish on earth!)green tomato relish (picalili), green tomato and cabbage relish, tomatoes, and jelly.

I want to start canning things like non-acidic veggies...esp. corn, beets, and carrots.

We also freeze a lot of things and use our vacuum sealer for that.
