Definitely Beauty and the Beast. Besides being my favorite movie when I was younger, it is (as far as I know) the only animated movie ever to be nominated for Best Picture!
All the Shrek movies are also amazing. Actually, pretty much everything by Pixar is amazing. Wall-E would have to be up on that list.
Emperor's New Groove is hilarious. I know they later made a TV show, and I'm guessing the movie (which came first) is probably much better.

How has Hoodwinked not been mentioned?
From a lesser financial company, the animated is put together quite well.

I listed Emperor's New Groove the MOVIE as my favorite...the TV show is terrible. David Spade has the perfect voice and personality for Cuzco.

Fantasia 2000 - Specifically the Firebird Suite sequence.
