Well, the garden lettuce is ready, even in Canada... but tomatoes, cucumber & ranch dressing every day is not the kind of sparkle I'm looking for when I dress up a bowl of crisp green buttercrunch.

Professionals always make salads sound so good!

What creative and wonderful salads have you made, imagined, seen on TV, ordered, thought about ordering, or had served as a guest? What are the best or worst items to put in a salad? What exactly is 'supposed to' go in some of those standard salads? Anybody make their own dressings?

[:'(] My mother in law insists on putting everything in her fridge into salads. She will cut up cucumber, carrots, celery, tomatoes, and all the normal salad veggies and then throw in watermelon, grapes, orange pieces, banana, and apple![:'(][:'(][:'(][:'(]

It drives me nuts... the poor salad doesn't know if it's a fruit salad or veggie salad!


I made the mistake of planting two full rows of lettuce all at once instead of planting a little every two weeks for a couple months so right now we have TONS of lettuce. We have been eating chicken salad, salad wraps (veggies and dressing wrapped in a big leaf), lettuce soup (not good.), and dh is eating salad for lunch every day! I am going to start trying to make my own dressing, hopefully someone will come in and post yummy recipes!

I do like a little bit of carefully selected fruit in a salad...

Summer Sweet Orange Salad

Lettuce or Spinach
Cucumber
Slivers of Red Onion
Mandarin Orange Segments
Crasins
Tiny Cheese Cubes
Roasted Sunflower or Pumpkin Seeds (kernels, not shells too)

Mandarin - Sesame Dressing (made by Kraft)

Three things should never make it into a salad: grated carrot, alfalfa and bananas.

Ok, sorry, couldn't resist that...[;)]

Cook pasta and chill.
Add pesto, sundried tomatoes, shaved Parmesan cheese and toasted (and they must be toasted, they taste so much better!) Pine nut kernals.

Mix.

Eat.

I make my own dressings sometimes. I'll have to dig them out though.

We used to have Wilted Lettuce Salad a lot when I was a teenager, with fresh garden lettuce.

Here is one of my favorites:

It's best made with spinach, but if you have lettuce coming out your ears, I suppose you could use that as well!

1 bag spinach (or a bunch or two of lettuce)
1 red onion
1 can mandarin oranges

Toss together

Dressing:
1/4 c. oil (any kind will do)
2 tbsp. sugar (or honey)
2 tbsp. vinegar
1 tsp. parsley
1/2 tsp. salt
1/4 tsp. tobasco sauce

Shake well

Topping:
1/4 c. sliced almonds
4 tsp. sugar
Cook over medium heat until candied. Sprinkle over salad.

The last really good salad I had was full of red stuff. Red onion, red lettuce, red cabbage, red peppers and tomatoes. Very pretty and very tasty. A bit oriental in style. It was at a restaurant, I'm not sure but it might have been Applebee's.

One of our favorites is a mixture of greens (including spinach), tomatoes, black olives, fresh corn cut off the cob, and grated cheese.

Top with chicken that has been rolled in paprika, chili powder, cumin and cayenne pepper and sauted in olive oil.

You can use italian (we use Annie's Tuscany Italian) or raspberry/walnut vineagrette as dressing.

"Something Fishy" Caesar

Lettuce
Cucumber
Bacon Bitts
Caesar Dressing
Parmesan
Goldfish Crackers

(Cold diced chicken can make this a meal.)

I love beets, avocado (if I can afford it), fresh mushrooms, chopped hard boiled eggs and also walnuts, sesame seeds or even pecans are all good on salad.

I love salads!

Italian Toss:

Lettuce
Tomato
Salami
String cheese
Pepperoncinis
Cherry peppers

Chop everything and toss with Italian dressing and croutons. Disappears quickly!



Asian Salad:

Lettuce
Chicken, cooked and cubed
Mandarin oranges

Toss with Asian dressing and those crunchy Chinese noodles. Yummy! (Gotta have fortune cookies too)

New one today:

Fried Mushroom Salad

Fry fresh mushrooms in a sizable puddle of butter & garlic salt (this becomes dressing) add a healthy sprinkle of Parmesan cheese.

Pour the mushrooms hot from the pan onto bowls of lettuce & tomatoes (tomatoes on top).

I think this one might want a side of multigrain buttered toast as a 'crouton'... maybe cut in nice triangles...

Broccoli flowerets, raisins, garbanzo beans and/or pickled red beans, and croutons are good too. I sure love a good salad!
