It's pumpkin season!! I absolutely love baking with pumpkin, it's my favorite!

Post your favorite pumpkin recipes here!

Chelle already posted these in the WO folder but I thought I would put them here too:

Pumpkin Apple Bread

3 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups granulated sugar
1 (15 ounce) can pumpkin puree
4 large eggs
1 cup vegetable oil
1/2 cup apple juice or water
1 large baking apple, peeled,cored and diced

Preheat oven to 300 degrees. Grease and flour two 9x5 loaf pans. I personally like using a bunt pan more than loaf pans, but either one works.
Combine flour, cinnamon, baking soda, and salt in large bowl. In a separate mixing bowl combine sugar, pumpkin, eggs, vegetable oil, and apple juice; beat until just blended. Add pumpkin mixture to flour mixture, stir until moistened. Fold in apples. Spoon batter into prepared pans and bake for 65-70 minutes or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes before removing.

If using three 8x4 inch loaf pans: bake for 60-65 minute
If using five or six 5x3 inch mini-loaf pans: 55-60 minutes

Pumpkin Gooey Butter Cake: not healthy, but really yummy!
CAKE
1 (18 1/4 ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
FILLING
1 (8 ounce) package cream cheese, softened
1 (15 ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16 ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

One of our favorite pumpkin recipes is pumpkin pancakes, they are so yummy!

Pumpkin Pancakes
* 2 cups all-purpose flour
* 3 tablespoons brown sugar
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground allspice
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/2 teaspoon salt
* 1 1/2 cups milk
* 1 cup pumpkin puree
* 1 egg
* 2 tablespoons vegetable oil
* 2 tablespoons vinegar

1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Somewhere, I have a recipe for a pumpkin spice latte -- I can post it later when I find it.

Do you ever use real (non-canned) pumpkin in your recipes? If so, do you use the smaller baking pumpkins or the big jack-o-lantern type pumpkins?

Yes yes yes!!! A latte recipe would be phenomenal, I would love that!!!!!!

The pumpkin I just bought is enormous, I almost couldn't get it from our car into the house! They are great, I sprinkle some spices on it when it is baking and then add a few more when I puree it, it tastes yummy! I will probably buy another one before pumpkin season is over.

Pumpkin Spice Latte

1 tbsp canned pumpkin
2 tbsp vanilla extract
1/4 tsp cinnamon, ground
1 cup milk
1/2 cup strong coffee, or 1/4 cup espresso

In a saucepan, heat milk and pumpkin until steaming. Stir in vanilla and cinnamon. Put mixture in a blender and blend for 15-20 seconds until thick and foamy. Pour into tall glass, then add coffee (or espresso). Top with a sprinkling of pumpkin pie spice or ground nutmeg. 1 serving.

Enjoy!

This is a SILLY question, but oh well...

When you use a real pumpkin do you open it up and cut the insides out, or do you back the whole thing first? What do you do? What do you do?

Yum! I have Pumpkin Breakfast Cookies in the oven right now!

1 3/4 C Pumpkin(I used canned)
1/3 C apple sauce
2 C quick cooking oats
spices as desired(I used ginger, cinnamon, and nutmeg)
1 tsp Vanilla extract
1/4 C ground flax(optional)
1/4 C milk
1/2 C of dried fruit or nuts
Squirt of honey for additional sweetness(optional, I rarely add it in)

Preheat oven to 350 degrees, mix all ingredients and drop by tablespoons onto a greased cookie sheet. Bake for 15-20 minutes. These cookies don't fall and spread like normal cookies. They are very, very moist and the batter should seem almost runny.

They are delish! Gabby is actually screaming at me right now because I ate the last bite of the one I was sharing with her She loves the Quaker oatmeal sqaure things, but they have so much crud in them that I was determined to find an alternative and these are super good. You can use the same recipe with bananas in place of the pumpkin, just use 3 good sized ones and mash well.

Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in pumpkin, sour cream and vanilla.

Pour into crusts, bake at 350 degrees for 60 minutes. Cool, then let set in refrigerator.

It's fantastic!

I don't know... I haven't tried this yet -- I don't keep much milk on hand. It does seem like such a small amount. Maybe you could double it?

BTW, that little girl of yours is absolutely adorable!!
