I made these for our tv spot last week. They were a hit. Honey Pumpkin Butter 2 c. cooked pumpkin, pureed 1/2 c. honey 1 t. grated lemon rind 1 T. lemon juice 1 or 2 t. cinnamon 1/2 t. nutmeg 1/4 to 1/2 t. ginger 1/4 t. cloves 1/4 t. salt Mix all ingredients thoroughly. Simmer uncovered on low heat about 40 minutes, stirring frequently, until thick like apple butter. Ladle into jars and refrigerate. Pumpkin/Cranberry Muffins 2 eggs 1/2 c. cooked pumpkin, pureed 1/3 c. honey 4 T. melted butter (REAL butter!!) 1 t. vanilla 3/4 t. baking soda 1/2 t. salt 1 1/2 t. cinnamon 1/2 t. nutmeg 1/4 t. cloves 1/4 t. ginger 1 1/2 c. almond flour 1/2 c. dried cranberries (read label--NO SUGAR!) Preheat oven to 325. Line muffin pan with paper liners. In large mixing bowl, combine all ingredients except flour and cranberries. Stir in almond flour until well combined. Stir in cranberries. Spoon batter into muffin cups, top with topping (below), bake for 25-30 minutes. 1 c. chopped dried cranberries 1 c. chopped toasted pecans 1/2 c. honey 2 T. grapeseed oil Combine and use as muffin topping.

Maybe $3 for a decent sized bag? What's flax for? It's supposed to be healthy, right. I seem to remember my gramma drinking aloe vera juice with flax seed and nutmeg. Does it taste pretty good? Heheh, well they sell it the bulk section at my grocery store, so I suppose I could just bring a spoon and try it before I buy it. It's good to put it in vaccuum juice too? So, I made something pretty good. I followed the recipe for oatmeal cookies on the Quaker box, and shaped them so they dipped in the middle, then when they were just a couple minutes from being done, I spooned a little pumpkin pie filling onto them. They were really good. I would have just put the filling into the batter, but I'm not very intuative about baking, so I wasn't sure if the cookies would be too liquidy or something.
